so shi has gone on strike from veggies (well the ones she sees as vegetables).  i searched
the internet for some ideas and recipes to help me out with giving her the good foods
and found some great ones that you all should try:

kale chips.


yes. kale.  at first i wasn't sure if shi would like it, but honestly she gobbled up the first batch i did.  i'm going to try if other leafy greens work, but so far the kale crisps up really well.  tastes like the dried seaweed wrappers used to make sushi...just add a bit of salt to taste to the kale before placing in oven.

Kale Chips
1 bunch kale
canola or olive oil, for cooking
good-quality coarse salt
Preheat the oven to 400°F.

Wash kale and dry it in a salad spinner or between tea towels. (Extra moisture will keep them from getting nice and crispy.) Cut or pull out the tough stems, tear the leaves into chip-sized pieces and spread out on a rimmed baking sheet. Drizzle with oil and toss with your hands to coat well; arrange in a single layer and sprinkle with salt.
Roast for about 10 minutes, until crispy and starting to turn brown on the edges, but not too dark. Serve immediately or cool completely and store in an airtight container until ready to serve. Serves 6.

butternut squash mac & cheese

shi loves mac & cheese.  but i didn't want to keep giving her the ones out of the box (though the kraft mac&cheese i do  L O V E).  she used to like squash by itself, but now she'll just spit it out.

you guys have to try this recipe out.  she ate and ate and ate it ALL.  i substituted acorn squash and it turned out just as well.  also, i added crispy bacon on top (for myself) shi didn't care much for the bacon, but the salty and sweet combo is yum! also, the recipe makes a good amount of sauce, so if you're not going to finish it all in one meal you can freeze up the rest in an airtight container or ziplock.
